Fiesta Lime Chicken

Ingredients 

  • 3-4 Boneless Skinless chicken breast

  • Olive Oil

  • Old El Paso Taco Seasoning (Less Sodium is a great choice!)

  • Your preferred shredded cheese. I always use a Taco or Mexican blend for this recipe.

  • 2-3 Limes

  • Salt & Pepper to taste 

Directions

  • Preheat oven to 375. 

  • Put tin foil in a small baking pan, making sure the edges are covered. 

  • Drizzle about a tablespoon of olive oil and spread it around in the bottom of the pan. 

  • Next, add your chicken to the pan. It's okay if they're touching or seem too close together. 

  • Sprinkle the taco seasoning across all the chicken breasts, be as generous as you'd like. Once its on there, use your hand and rub the seasoning into the chicken. Flip the breasts over, and repeat for both sides. 

  • Cut 1 lime in half and squeeze the juice onto all the pieces of the chicken. Use both halves.

  • Place chicken in center rack of oven for 30-45 minutes depending on the size of your chicken and oven. 

  • Once your timer is up, use a meat thermometer to check the temperature of your chicken. It should be in the 140/160 range and that's perfect. 

  • Next, take the chicken out of the oven, sprinkle a generous amount of your cheese on top of the chicken breast - only on top! and put back into the oven for another 10-15 minutes until the cheese is melted and the chicken has reached temperature. 

  • Feel free to mix and match your sides. For this, I try to stick with just vegetables as the chicken breast is more than filling.
